As the original poster of this question, I am pleased to report that we
get perfect diacritics by selecting Unicode (UTF-8) as the "File origin"
during conversion of the exported file to Excel 2007. Very interesting
discussion.

Thanks to everyone for this interesting discussion. I'm just trying to get up to speed on Unicode and it has been most helpful. We are converting our database to Unicode soon, so it will be interesting to see how that goes.
