Pedro,

There were two institutions mentioned at a session I attended at IUG16
that discussed Symposia:

Colby College http://www.colby.edu/academics_cs/library/index.cfm
Northeastern University http://iris.lib.neu.edu/

If you find out about other institutions using Symposia, please post
them to the list, as I'm sure that there are others who are interested
in this information.
