We use a different flavor wiki for all of our internal procedures not just III. We have used a hosted wiki called eTouch SamePage for roughly a year now and it has been wildly successful. Subwikis are called projects and we have 36 projects covering broad areas like Circulation or Reference. The wiki now contains over 1400 pages and 1600 attachments. It is easily searchable and almost more importantly for us, pages are easy to edit for the uninitiated. Since we are a seven campus college, this has made consistent operations and procedures much easier. I recommend using a wiki. Don't know how we got along without it. (Actually, I do know and it wasn't easy.)
