What you're seeing is not ASCII text versus HTML; what you're seeing is HTML-formatted text in both cases, but the brief display is displaying the text within an HTML "pre" element, while the full display is using other HTML elements. In this regard your live OPAC and your staging OPAC are no different, and both are Pro, so it's not specifically a WebPAC Pro thing that's responsible for the squishing.

The source of the squishing problem (as well as the problem with the first exported record missing altogether) is that your staging port is using a customized bib_display.html, and your code for this file is kind of messed up (see any bib record). The export full display uses the code from bib_display.html to display record data, so you'll need to clean up that file in order to clean up the exported records display.
