[IUG] Overlay protection codes

I will soon be doing our first full patron load after implementation. I
reviewed the overlay protection settings and found one field that needed to
be added (Note(x)), and I did so, using a protection code of "D".
I noticed that none of the other patron record fields are displaying a
protection code. According to the manual (page 101871), this means that the
"N" code is being applied to those fields.
I have two questions:
(1) Would it be advisable to check those other fields to see whether their
protection codes have been properly designated? IOW, would it be unwise to
assume that using "N" for all of them is OK?
(2) What exactly does "N" do? The manual says that "the version of the field
in the target record will be retained", and "the version of the field in the
incoming record will be inserted." Does this mean that a new record will be
created with the incoming record's data?
