Steve -- You cannot do this with Global Update. However, you can do this with the transfer program.
This is the link for the manual if you are on Telnet (Page # 102947). If you are on Millennium, you can do this through Fiscal Close:
T > TRANSFER orders from one fund to another

Having said that, I am not sure how this would work outside of Fiscal Close. This was not an issue in Telnet, but could be in Millennium. If someone has done this effectively, it would be good to go to the list and supplement this answer.
If it is forcing you to go through Fiscal Close, you might call the helpdesk and they can give you better guidance.

Subject: [IUG] Global Update of FUND Field in Order Records?
Our Acquisitions Department asked me to help with some global updates of
fund codes in order records. I blithely said, "Sure, no problem!" So the
acquisitions folks assembled a number of review files for me to perform
updates upon, and I went in to Global Update to run the first change,
only to discover that the "Fund" code is *not* among the fields listed.
So my questions are, 1) Is this a field that cannot be changed through
Global Update or Rapid Update, and 2) If so, why?
If these cannot be globally updated, we're looking at changing several
thousand records by hand, which is a prospect too horrible to
contemplate.
