I would use a good AV product in conjunction with Deepfreeze.

What can happen as stated earlier is that the infected deepfreeze
computer can spread the virus into other systems.

About two years ago, I had a virus get into our library that would
cause the computer to reboot. What wound up happening was that the
systems would keep cross infecting other systems and causing them to
reboot. I finally had to close down every PC then bring them online one
by one, making sure that all of the PCs had updated AV software and on
the non-deepfrozen systems, make sure that they were cleaned up
properly. I also had to install a patch that I had missed on the
systems. The result was that we had to close the library for the day in
order to clean up.

It was a mess and drove home the importance of keeping the AV software
updated on a daily basis. I have since installed Trendmicro Officescan
on our network and Windows Server Update Services. I set them to push
out to the clients during a Deepfreeze maintenance thaw in the morning
before opening.
