I think that in every template, there should be options for each of the 
date fields.  You should be able to choose to have a date field come up 
with no default; with a specific date as a default; with a partial date 
as a default (for example, just 19 for year); or with a calculated date 
(for example, 1 year from the current date.)  This would really let you 
customize appropriate settings for birthdates, expiration dates, etc.
