We're using Star TSP600 printers at our check-out desk and have no complaints. Without ribbons to change the print is consistently dark. The printing is astoundingly fast and quiet. As for your question about jams, we've never seen a paper jam. Most surprising of all, the paper for these printers has proved to be cheaper than the plain paper we were buying for our old receipt printers.
As for storing the thermal paper, we make no special efforts and it's stored just as the plain paper was - in a box under the counter.
Once the receipts are printed they are sensitive to heat. That is to say if you leave the receipt on the dashboard of your car in the summer heat it will darken. They are not nearly as suseptible to light. I have a test receipt that is several years old and has not darkened even though it's exposed to indoor light all day.
